Paleo Cherry Pop Tarts
Ingredients
Crust
- 1 cup almond flour
- 1 cup cassava flour
- 1tbsp tapioca starch
- 1/2tsp vanilla
- 1/2tsp almond
- 1 egg
- 1/3 c maple syrup
- 1/2c butter
Filling
- 2 cups pitted fresh cherries, cut into 1/2s or 1/4s
- 1tbsp cold water
- 2tbsp honey
- 1tbsp maple syrup
- 1/2tsp vanilla
- 1/2tsp almond
- 1 scoop vital proteins
Preheat oven to 375.
Mix all ingredients for crust until everything is combined & you are able to form a ball. Place in fridge while you make filling.
Place all ingredients for filling in a sauce pan, cook on low for around 15-20 mins until everything is combined & absorbed. Be careful not to burn.
Take crust out of fridge and roll it out on parchment paper. Once itβs about 1/4 inch rolled out, cut into rectangles to the size of your pleasing. Use spatula to transfer rectangle cutouts over to baking pan lined with parchment paper. Lightly roll out even more if necessary. Place filling on top of each cutout, leaving about an inch of dough on each side. Place another cut out over the filing. Mend the sides together and use a fork or whatever you prefer for designs. Brush top with melted ghee for browning. Place in oven and cook for about 17 minutes or until golden brown. Drizzle remaining cherry filling on top if you prefer. Let cool before transferring or enjoying. Enjoy!
